  • 1¾ cups (210 grams) all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup (50 grams) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F and prepare a 9-inch square baking dish with butter and parchment.
  2. Boil apple cider in a sauté pan until reduced by half. Mix in diced butter until melted.
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt.
  4. Gradually add the reduced cider mixture to the wet ingredients.
  5. Stir in flour until just combined; pour batter into the prepared dish.
