  • ¼ cup Greek yogurt
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a medium bowl, combine flour, brown sugar, granulated sugar, and cinnamon for the crumble. Mix in melted butter until clumps form; set aside.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  4. In a large bowl, use an electric mixer to beat together brown sugar, granulated sugar, and room-temperature butter until fluffy. Add eggs, Greek yogurt, and vanilla; mix well.
  5. Gradually incorporate half of the dry ingredients into the wet mixture. Add milk and then the remaining dry ingredients. Gently fold in diced apples.
  6. Fill muffin cups three-quarters full with batter and top with crumble mixture.
  7. Bake for 20 minutes or until a toothpick comes out clean. Allow cooling before serving.
