  • 300 g granulated sugar (divided)
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (whole or lactose-free)
  • 2 tsp vanilla bean paste
  • Salt

Instructions

  1. Peel and thinly slice the apples, tossing them with 150 g sugar and salt.
  2. In a saucepan, cook sliced apples over medium heat for about 10 minutes until softened but still firm. Set aside.
  3. For the custard, whisk together 150 g sugar, cornstarch, and salt in another saucepan. Gradually add milk while stirring continuously until thickened.
  4. Temper egg yolks with hot milk mixture before combining back into the saucepan; stir until fully thickened.
  5. Layer cooked apples and custard in a baking mold, finishing with custard on top. Chill for at least two hours before serving.
