  • 1 large head of broccoli
  • ½ ripe avocado
  • 8 oz cremini mushrooms
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh oregano, chopped
  • ½ tsp dried thyme
  • 1 tbsp lemon juice
  • Salt & freshly cracked black pepper to taste
  • ¼ cup crispy fried onions
  • 2 tbsp butter

Instructions

  1. Marinate sliced chicken in olive oil, minced garlic, oregano, thyme, lemon juice, salt, and pepper for at least 30 minutes. Grill until cooked through.
  2. Preheat the oven to 400°F (200°C). Toss broccoli florets with olive oil and garlic; roast for 15 minutes before adding Parmesan and roasting for an additional 5-10 minutes.
  3. In a skillet, sauté mushrooms and garlic in butter until softened. Mash in the avocado; add heavy cream and simmer. Stir in Parmesan cheese until melted.
  4. Serve grilled chicken over crispy broccoli and drizzle with creamy Alfredo sauce.
