- 2 lbs boneless chicken thighs or breasts
- 1 cup plain Greek yogurt
- 2 tbsp olive oil
- 3 tbsp lemon juice and zest
- 2 cloves garlic (crushed)
- 2 tbsp za’atar seasoning
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/4 cup fresh parsley (chopped)
Instructions
- Preheat the oven to 375°F.
- In a bowl, whisk together Greek yogurt, olive oil, lemon juice and zest, garlic, za’atar seasoning, salt, black pepper, and red pepper flakes until smooth.
- Place chicken in a large plastic bag or container and pour the marinade over it. Seal tightly and refrigerate for at least 30 minutes or overnight.
- Coat a baking dish with olive oil or cooking spray. Arrange marinated chicken in a single layer and bake uncovered for about 45 minutes or until golden brown and cooked through (internal temperature should reach 165°F).
- Garnish with chopped parsley before serving.
