  • 2 lbs boneless chicken thighs or breasts
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 3 tbsp lemon juice and zest
  • 2 cloves garlic (crushed)
  • 2 tbsp za’atar seasoning
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. Preheat the oven to 375°F.
  2. In a bowl, whisk together Greek yogurt, olive oil, lemon juice and zest, garlic, za’atar seasoning, salt, black pepper, and red pepper flakes until smooth.
  3. Place chicken in a large plastic bag or container and pour the marinade over it. Seal tightly and refrigerate for at least 30 minutes or overnight.
  4. Coat a baking dish with olive oil or cooking spray. Arrange marinated chicken in a single layer and bake uncovered for about 45 minutes or until golden brown and cooked through (internal temperature should reach 165°F).
