- 2/3 cup mashed ripe bananas (2 medium sized)
- 1/2 cup sour cream
- 2/3 cup whole milk
- 1 cup miniature chocolate chips, divided
- 1 cup miniature vegan marshmallow bits, divided
Instructions
- Preheat your oven to 400°F (200°C) and prepare a muffin pan with cupcake liners.
- In a mixing bowl, beat together melted butter and brown sugar until combined. Add egg, vanilla extract, mashed banana, and sour cream; beat until smooth.
- In another bowl, mix flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
- Gradually mix dry ingredients into wet mixture alternately with milk until just combined.
- Fold in 3/4 cup each of chocolate chips and vegan marshmallows.
- Spoon batter into cupcake liners and top with remaining chocolate chips and marshmallows.
- Bake for 16 minutes or until a toothpick comes out clean.
- Let cool in the pan for 3-4 minutes before transferring to a wire rack.
