  • 4 Yellow Onions (sliced thin and evenly)
  • 2 Pounds Yukon Gold Potatoes (washed)

  • 3/4 Cup Half & Half or Full-Fat Coconut Milk or Dairy-Free Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (freshly grated)
  • 1 Bunch Chives (thinly chopped)
  • 2 Sprigs Fresh Thyme (stems removed)
  • 3 Leaves Fresh Sage (chopped)

Instructions

  1. Slice the yellow onions thinly.
  2. Heat olive oil in a skillet over medium heat; add onions and cook for 40-50 minutes until caramelized.
  3. Chop the Yukon Gold potatoes and boil in salted water until fork-tender (about 20 minutes).
  4. Drain the potatoes, return them to the pot, and mash with butter, salt, and half & half (or coconut milk) until smooth.
  5. Incorporate half of the caramelized onions into the potatoes along with grated Parmesan cheese.
  6. Serve topped with reserved caramelized onions and fresh herbs.
