Ingredients

Scale
  • ½ cup unsalted butter (browned)
  • 1 cup warm whole milk
  • ½ cup granulated sugar (divided)
  • 2¼ tsp active dry yeast
  • 1 large egg + 1 egg yolk
  • ¾ cup pumpkin puree
  • 5 cups all-purpose flour
  • 1 tsp kosher salt
  • 1 cup dark brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp pumpkin pie spice
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 2 tsp vanilla essence

Instructions

  1. Prepare brown butter by cooking unsalted butter in a pot until golden, then let it cool slightly.
  2. In a mixing bowl, combine warm milk, 2 tablespoons sugar, and yeast; allow it to froth for about 5 minutes.
  3. Add remaining sugar, brown butter, pumpkin puree, eggs, flour (starting with 4¾ cups), and salt. Knead until smooth and let rise until doubled in size.
  4. For the filling, mix dark brown sugar, additional pumpkin puree, cinnamon, and pumpkin pie spice until smooth.
  5. Roll out dough into a rectangle, spread softened butter and filling evenly, then roll tightly and slice into 12 rolls.
  6. Place rolls in a greased baking pan and let rise while preheating the oven to 350°F.
  7. Bake for about 30 minutes until golden brown.
  8. While baking, prepare icing by whisking cream cheese and butter; gradually add powdered sugar, vanilla essence, and pumpkin pie spice until combined.
  9. Frost warm rolls generously before serving.
