  • 1 ½ cups (160g) pecan halves, very finely chopped
  • 1 ½ cups (340g) unsalted butter, softened
  • 6 oz cream cheese, softened
  • ⅓ cup (66g) light brown sugar, firmly packed
  • 1 ½ tsp vanilla extract
  • ¼ tsp salt
  • 4 ½ cups (562g) powdered sugar
  • 1 tbsp heavy cream
  • ⅓ cup (35g) pecan halves, very finely chopped, optional

Instructions

  1. Prepare the browned butter by melting unsalted butter in a saucepan over medium-low heat until golden specks form. Let cool.
  2. Preheat your oven to 350°F (175°C) and grease three 8-inch round pans, lining the bottoms with parchment paper.
  3. In a large bowl, whisk together cake flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  4. In another bowl, combine buttermilk, eggs, and vanilla extract until smooth. Mix into the dry ingredients along with cooled browned butter until just combined.
  5. Gently fold in finely chopped pecans.
  6. Divide batter among prepared pans and bake for about 30 minutes or until a toothpick inserted comes out clean.
