  • 3 tbsp butter
  • 1/3 cup brown sugar

  • 2 tbsp dark vanilla extract (alcohol-free)
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan and bake for 8 minutes.
  3. Lower oven temperature to 325°F (163°C). Beat cream cheese until smooth; gradually add sugar, then eggs one at a time, followed by sour cream and vanilla.
  4. Pour filling over crust and bake for 55-65 minutes until edges are set but center jiggles slightly.
  5. Let cool in the oven with door ajar for an hour, then chill in the fridge for at least 4 hours or overnight.
  6. In a skillet, melt butter and brown sugar; add bananas and cook until golden. Set aside.
  7. For the glaze, melt butter and brown sugar in a saucepan; stir in vanilla extract and simmer briefly.
  8. Top chilled cheesecake with caramelized bananas and drizzle with glaze before serving.
