  • 6 large flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Stir in chopped onion and cook for 3 minutes. Add minced garlic and cook for another minute. Mix in chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer for 3–4 minutes.
  3. Lay out tortillas on a clean surface. Sprinkle cheddar and Monterey Jack cheese on one half of each tortilla, spoon beef mixture over the cheese, then top with more cheese. Fold tortillas in half to seal.
