  • 4 oz can chopped green chiles (undrained)
  • ½ cup chicken stock
  • ½ cup sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 3 cups shredded cooked chicken
  • 4 cups shredded cheddar cheese
  • 12 corn tortillas

Instructions

  1. Preheat oven to 350°F and spray a baking dish with cooking spray.
  2. In a large skillet over medium heat, melt butter and sauté onions and peppers until softened (about 10 minutes).
  3. In a bowl, mix together diced tomatoes, soups, chiles, broth, sour cream, and spices.
  4. Combine sautéed veggies with the sauce mixture.
  5. Layer half the sauce in the baking dish; add half the chicken, followed by half the cheese and half the tortillas.
  6. Repeat layering process with remaining ingredients.
