Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time and stir in vanilla extract until combined.
  4. In another bowl, whisk together flour, baking soda, salt, and ground cinnamon.
  5. Gradually add dry ingredients to wet ingredients, stirring gently until just combined.
  6. Prepare the cinnamon-sugar mixture in a small bowl by combining sugar and ground cinnamon.
  7. Take one tablespoon of dough, flatten it slightly, place chocolate in the center, and fold the dough around it to seal.
  8. Roll each cookie ball in the cinnamon-sugar mixture until fully coated.
  9. Bake for about 10–12 minutes until edges are lightly golden.
  10. Cool on the baking sheet for several minutes before transferring to a wire rack.
