  • 1 cup sour cream
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (optional, to thin if needed)

Instructions

  1. Preheat oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan to form the crust.
  2. For the cinnamon roll layer, mix softened butter, brown sugar, and ground cinnamon until smooth. Spoon this mixture over the crust in swirls.
  3. In another bowl, beat softened cream cheese until creamy; add sugar and mix well. Incorporate eggs one at a time followed by vanilla extract and sour cream.
  4. Add brown sugar and ground cinnamon; mix just until blended. Pour over the cinnamon roll layer in the springform pan.
  5. Bake for about 55 minutes until set but slightly jiggly in the center. Cool inside the oven for one hour before refrigerating.
  6. For frosting, beat together cream cheese and butter; gradually add powdered sugar and mix in vanilla extract.
  7. Frost the cooled cheesecake and chill for at least 4 hours before serving.
