  • 1 tsp. baking soda

  • 1 cup cold, unsalted butter, cubed
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. In a large bowl, mix the dry ingredients: all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  3. In a stand mixer, cream cubed cold butter until fluffy; gradually add granulated sugar and mix well.
  4. Beat in eggs, egg yolks, and vanilla extract until combined.
  5. Combine the wet and dry mixtures until just mixed.
  6. Press the dough into a rectangle and spread the cinnamon filling evenly over it.
  7. Roll the dough tightly into a log and cut into 10-12 pieces.
  8. Bake on a parchment-lined sheet for 9-11 minutes until edges are golden brown.
