  • 6 slices of bread (about 1 1/2 cups breadcrumbs)

  • 1 1/2 cups marinara sauce
  • 1 lb mozzarella cheese

Instructions

  1. Slice the eggplants into 1/4-1/2 inch rounds, sprinkle with salt, let sweat for 10 minutes, then pat dry.
  2. Toast the bread slices until golden and process into breadcrumbs. Combine with garlic powder, salt, pepper, Italian herbs, and parmesan cheese.
  3. Set up a breading station with flour, whisked eggs, and breadcrumbs. Coat each eggplant slice in flour, dip in egg, then coat in breadcrumbs.
