  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions

  1. Prepare the streusel filling by mixing flour, brown sugar, cinnamon, and salt. Incorporate softened butter until clumps form. Refrigerate.
  2. Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
  3. In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  4. Cream cold cubed butter with both sugars in a stand mixer until smooth.
  5. Mix in eggs and vanilla extract until combined.
  6. Gradually add dry ingredients until fully incorporated into the dough.
  7. Shape dough into balls and create indents in each ball; fill with chilled streusel.
  8. Bake for 8–11 minutes or until edges are set and lightly golden.
