- 1½ lbs boneless, skinless chicken breasts
- 12 oz fettuccine pasta
- 1½ cups heavy cream
- 4 oz cream cheese
- 1 cup grated Parmesan cheese
- ¾ cup shredded mozzarella cheese
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp onion powder
- Salt and black pepper, to taste
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Boil fettuccine in salted water until al dente; drain and reserve pasta water.
- Toss chicken pieces with Cajun seasoning and garlic powder.
- In a large skillet, heat olive oil over medium-high heat and sear the chicken for 5–6 minutes, flipping to brown all sides.
- Add butter and minced garlic; toss to coat and remove from heat.
- In a separate skillet, melt 2 tbsp butter over medium heat and stir in cream cheese until smooth.
- Slowly pour in heavy cream while whisking, then add Parmesan, mozzarella, garlic powder, salt, and pepper; stir until cheese is melted and sauce is thickened.
- Toss cooked fettuccine in the Alfredo sauce until well coated, then plate it and top with warm Cajun chicken bites.
- Sprinkle with chopped parsley and serve immediately.
