  • 1 cup mushrooms (cremini or button)
  • ½ cup heavy cream
  • ¼ cup chicken broth
  • 2 medium Yukon Gold potatoes
  • 2 tbsp basil pesto
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic, rosemary, salt, and pepper; roast for 25–30 minutes until golden.
  2. In a skillet over medium-high heat, cook seasoned chicken for about 4–5 minutes per side until golden; remove from skillet.
  3. In the same skillet, sauté mushrooms and garlic until tender; add broth and cream, stirring in Parmesan cheese until smooth. Return chicken to skillet and simmer until the sauce thickens.
  4. Whisk together basil pesto and Greek yogurt (or cream) for the drizzle.
  5. Serve plated with roasted potatoes alongside the chicken and drizzle with basil pesto cream.
