- 2 small sweet potatoes
- 1 small onion, diced
- 200g mushrooms, sliced
- 2 garlic cloves, crushed
- 60g spinach
- 1 heaped tbsp tahini
- 1 tsp nutritional yeast
- Juice of ½ small lemon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash the sweet potatoes and poke holes in each with a fork.
- Place the sweet potatoes on a baking tray and roast for about 40 minutes until tender.
- In a skillet over medium heat, sauté the diced onion until translucent. Add garlic and mushrooms; cook until mushrooms soften.
- Stir in spinach until wilted. Mix in tahini, nutritional yeast, lemon juice, salt, pepper, and cayenne pepper if desired.
- Once the sweet potatoes are roasted, slice them open lengthwise and fluff the insides with a fork. Spoon the filling into each half and serve warm.
