Instructions

  2. Halve the tomatoes and place them on the baking sheet. Drizzle with 1 tablespoon olive oil; season with salt and pepper. Cut the top off the garlic head, drizzle with remaining oil, wrap in foil, and add to the baking sheet.
  3. Roast for 30-35 minutes until tomatoes are caramelized and garlic is soft.

  5. Squeeze roasted garlic into the pot; add roasted tomatoes, their juices, broth, and fresh basil.

  7. Stir in heavy cream (or coconut milk) and simmer for an additional 5-10 minutes. Adjust seasoning as needed.
