- Stir in onions, carrots, celery, sundried tomatoes, and garlic. Sauté until vegetables are translucent (3–4 minutes).
- Gradually sprinkle flour into the mixture while stirring well. If using tomato paste, add it now.
- Whisk in chicken broth gradually to avoid lumps; deglaze the bottom of the pot.
- Bring to a boil and add pasta along with more Italian seasoning; simmer for about 20 minutes.
- Stir in heavy cream and fresh spinach; simmer for an additional 5 minutes.
