  • 2 chicken breasts (cut into bite-sized pieces)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 2 cans white beans (drained)
  • 2 cans mild green chilies (with juices)
  • 4 ounces cream cheese (softened)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt & pepper (to taste)
  • Lime juice, avocado, cilantro, Mexican cheese blend, tortilla strips, etc.

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the chopped onion for about 5–7 minutes until translucent.
  2. Add the chicken pieces and cook until no longer pink.
  3. Stir in minced garlic and cook for about 30 seconds.
  4. Add chicken broth, drained white beans, green chilies, chili powder, cumin, and oregano. Bring to a boil, then simmer for 10 minutes.
  5. Microwave cream cheese for about 30 seconds to soften; stir it into the chili until well combined. Cook for another 5 minutes until heated through.
  6. Season with salt and pepper to taste before serving with your favorite toppings.
