  • 1 large egg
  • ½ cup olive oil
  • ½ cup Parmesan cheese, shaved
  • 2 tbsp fresh lemon juice
  • 3 anchovy fillets
  • 1 tbsp garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp red apple vinegar
  • ½ tsp Worcestershire sauce
  • ½ tsp black pepper
  • Salt, to taste
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. Marinate chicken thighs in a blend of soy sauce, garlic, onion powder, egg, flour, and cornstarch for at least 20 minutes.
  2. While marinating, prepare toasted panko by melting butter in a frying pan and stirring panko until golden brown.
  3. Blend dressing ingredients – olive oil, egg, lemon juice, garlic, anchovy fillets, Dijon mustard – until smooth.
  4. Fry marinated chicken until golden brown and cooked through; drain on a wire rack.
