  • 12 oz package turkey breakfast sausage
  • 2 cans (15 oz each) great northern beans, drained
  • 1 can (15 oz) whole corn kernels, drained
  • 1 can (4 oz) diced green chilies
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) pure pumpkin puree
  • 4 cups chicken stock
  • 8 oz plain cream cheese
  • 1 1/2 teaspoon ground cumin
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground black pepper

Instructions

  1. In a skillet over medium heat, crumble and brown the turkey breakfast sausage until fully cooked. Drain excess fat.
  2. In your crockpot, combine the cooked sausage with great northern beans, corn, green chilies, diced tomatoes, pumpkin puree, chicken stock, cumin, chili powder, nutmeg, and black pepper. Stir well.
  3. Cover and set the crockpot to cook on low for 6-8 hours.
  4. About 30 minutes before serving, add room temperature cream cheese in chunks and stir until melted and incorporated.
