  • 1 cup fine bulgur
  • 2 cups boiling water
  • 3 cups curly parsley (minced)
  • 3/4 cup green onion (chopped)
  • 1/4 cup fresh mint (minced)
  • 1 1/2 cups roma tomatoes (diced)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh lemon juice
  • 1 1/2 teaspoon kosher salt

Instructions

  1. In a large bowl, add bulgur wheat and pour boiling water over it. Let soak for at least 30 minutes.
  2. While the bulgur soaks, finely chop parsley, green onion, mint, and roma tomatoes in a separate bowl.
  3. In another bowl, whisk together olive oil, lemon juice, and salt until well blended.
  4. After bulgur is tender, drain excess water using a colander lined with cloth.
  5. Combine the drained bulgur with the chopped veggies in a large bowl.
  6. Pour the dressing over the mixture and stir to combine thoroughly.
  7. Serve chilled or at room temperature with optional lemon wedges on the side.
