- 8 oz dry rotini pasta
- 9 oz hard turkey slices, chopped
- 6.5 oz turkey pepperoni, chopped
- 1 cup canned artichoke hearts, drained and quartered
- 2 cups cherry tomatoes, halved
- 1 cup olives, pitted and halved
- ½ cup pepperoncini, sliced
- 8 oz mozzarella pearls
- ¼ cup red onion, sliced thin
- ⅓ cup fresh basil, sliced thin
- ½ cup olive oil
- ¼ cup red apple vinegar
- 2 garlic cloves, minced
- 1 Tbsp Italian seasoning
- ¼ tsp red pepper flakes
- Salt & black pepper, to taste
Instructions
- Cook the rotini pasta in boiling water according to package instructions until al dente. Drain and cool.
- In a jar or bowl, whisk together olive oil, vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper.
- In a large mixing bowl, combine the cooled pasta with turkey slices, artichokes, cherry tomatoes, olives, pepperoncini, mozzarella pearls, red onion, and basil.
- Pour the vinaigrette over the salad mixture and toss until well-coated.
- Chill for at least 30 minutes before serving for enhanced flavors.
