  • 1/2 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract or vanilla bean paste (for frosting)
  • 1 tsp fine salt (for frosting)
  • 8 cups powdered sugar
  • 2 Tbsp heavy whipping cream, room temperature

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in buttermilk, vegetable oil, food coloring, vanilla extract, and vinegar.
  4. Gradually combine dry ingredients into wet mixture without overmixing.
  5. Divide batter evenly between pans and bake for about 28 minutes until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks.
  7. For frosting, beat butter and cream cheese until smooth; gradually add powdered sugar and mix in vanilla and salt.
