  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • Fresh thyme leaves (or dried thyme)
  • Salt and pepper to taste
  • Baguette or crusty bread for serving
  • Shredded Gruyère or Swiss cheese

Instructions

  1. Sear the short ribs in a Dutch oven over medium-high heat until browned on all sides. Remove and set aside.
  2. In the same pot, melt butter and caramelize the onions over medium heat until golden brown.
  3. Add minced garlic to the onions and cook briefly before returning the short ribs to the pot along with broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 2–2.5 hours until tender.
  4. Preheat oven to broil. Toast baguette slices and top with cheese; broil until bubbly.
  5. Remove bay leaf from soup before serving; ladle into bowls topped with cheesy bread.
