  • 3 large eggs
  • 150 g Greek yogurt
  • 260 g all-purpose flour
  • 2 teaspoons baking powder
  • 300 g pitted cherries
  • 2 tablespoons brown sugar (for topping)

Instructions

  2. Pit and chop the cherries, measuring out 300 g after pitting.
  3. In a mixing bowl, cream together butter and sugar until pale and fluffy. Add vanilla extract, eggs, and Greek yogurt; mix until well combined.
  4. In another bowl, whisk together flour and baking powder. Gradually incorporate into the wet mixture until just combined.
  5. Gently fold in two-thirds of the cherries.
  6. Pour the batter into the prepared loaf pan, scattering remaining cherries on top along with brown sugar.
