  • ½ cup unsalted butter
  • 2⅓ cups all-purpose flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ cup brown sugar
  • ½ cup sour cream (or plain yogurt)
  • ½ cup whole milk
  • 1 large egg
  • Powdered sugar (for glazing)
  • Fresh lemon juice (to taste)

Instructions

  1. Preheat oven to 425°F and coat a muffin tray with cooking spray.
  2. In a large bowl, microwave molasses and butter until melted; stir until combined and let cool.
  3. In another bowl, whisk flour, ginger, baking soda, cinnamon, and other dry ingredients together.
  4. Combine brown sugar, sour cream, milk, and egg into cooled molasses mixture; mix well.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Fill muffin cups to the top; sprinkle coarse sugar if desired.
  7. Bake for 5 minutes at high heat; reduce to 350°F and bake for another 11–14 minutes until a toothpick comes out clean.
  8. Cool slightly before transferring to a wire rack; prepare lemon glaze by mixing powdered sugar with lemon juice.
  9. Drizzle glaze over cooled muffins before serving.
