Ingredients
- 5 cups all-purpose flour
- 1/2 cup sugar
- 2.5 tsp salt
- 1/4 cup sourdough starter
- 1 cup water
- 1/2 cup milk
- 2.5 oz unsalted butter (melted and cooled to room temperature)

- 1/2 tsp yeast

- 2 cups milk (for filling)
- 1/3 cup sugar (for filling)
- 4 tbsp cornstarch (for filling)
- 2 egg yolks (for filling)
- 2 tsp vanilla essence (for filling)
- 1/4 tsp salt (for filling)
- 4 tbsp pistachio paste (for filling)
- 1 egg yolk (for egg wash)
- 1 tbsp cream (for egg wash)
Instructions
- In a mixing bowl, combine flour, sugar, salt, and yeast.
- In another bowl, mix water, milk, melted butter, almond essence, sourdough starter, and green food coloring. Gradually add this mixture to the dry ingredients until a dough forms; knead gently.
- Wrap the dough in plastic wrap and refrigerate for at least 6 hours or overnight.
- Prepare the butter block by flattening the unsalted butter between parchment sheets and refrigerate until firm.
- Roll out chilled dough into a rectangle; place the butter block in the center and fold over to encase it completely. Roll out again and fold into thirds; repeat three times.
- For the filling, heat milk with sugar, cornstarch, egg yolks, vanilla essence, salt, and pistachio paste until thickened. Cool before using.
- Roll out laminated dough once more and cut into triangles. Place a spoonful of filling at the base of each triangle and roll them up.
- Preheat oven to 375°F (190°C). Brush croissants with egg wash made from egg yolk and cream before baking for about 25 minutes or until golden brown.
