Ingredients

Scale
  • 1 pound flank steak (or strip steak)
  • 3 tablespoons olive oil
  • 3 tablespoons red apple vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 4 large pita bread
  • 1 cup fresh tomatoes, diced
  • 1 cup cucumber, chopped
  • 1 small red onion, thinly sliced

Instructions

  1. In a large bowl, whisk together olive oil, red apple vinegar, garlic, oregano, cumin, salt, and pepper. Add the flank steak to the bowl and coat it evenly. Cover and refrigerate for at least 30 minutes to marinate.
  2. Heat your grill or grill pan over medium-high heat.
  3. Remove the steak from the marinade and discard it. Grill the steak for about 4-5 minutes per side or until it reaches your desired doneness.
  4. Once grilled, let the steak rest for 5-10 minutes before slicing to help retain its juices.
  5. In a bowl, mix Greek yogurt, lemon juice, dill, and a pinch of salt. Adjust seasoning to taste and set aside.
  6. Thinly slice the grilled steak against the grain for tenderness.
  7. Lightly grill or warm the pita bread on the grill for 1-2 minutes until soft and pliable.
  8. Lay each pita flat and layer with sliced steak, tomatoes, cucumber, red onion, and a dollop of tzatziki sauce.
  9. Wrap the pita around the filling and serve immediately with extra tzatziki sauce on the side.
