  • 1 ¼ cups coconut milk (from a can)
  • 1 ¼ cups water
  • 1 tablespoon sugar (optional)
  • ½ teaspoon salt
  • 1 avocado, sliced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Sesame seeds, for garnish (optional)

Instructions

  1. In a bowl, mix olive oil, soy sauce, honey, lime juice, rice vinegar, garlic, paprika, ginger, salt, and pepper. Reserve half for basting.
  2. Marinate chicken breasts in the mixture for at least 15 minutes.
  3. Rinse jasmine rice and combine with coconut milk, water, sugar (optional), and salt in a saucepan. Bring to a boil then simmer until tender.
  4. Preheat grill to medium-high heat. Grill marinated chicken for about 6-7 minutes per side until cooked through; grill pineapple until caramelized.
