  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (minced)
  • 1 tsp garlic powder (optional)
  • ½ tsp red pepper flakes
  • ½ tsp ground nutmeg
  • ¼ tsp chili powder
  • Fresh cilantro and green onions for garnish
  • Long grain white rice
  • Avocado slices

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce, sesame oil, brown sugar, ketchup, minced garlic, and ginger until combined.
  2. Place chicken in a large resealable bag or dish; pour marinade over the chicken. Seal or cover and refrigerate for at least 20 minutes.
  3. Preheat your grill to medium-high heat or oven to 400°F (200°C).
  4. Remove chicken from marinade (reserve marinade). Grill chicken for about 6-7 minutes per side or bake on a lined baking sheet for about 20 minutes until fully cooked (internal temperature reaches 165°F).
