  • 1 cup grated zucchini (squeezed dry)

  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour (or spelt flour)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9" x 5" loaf pan with parchment paper or cooking spray.
  2. In a large bowl, mash the ripe bananas until smooth. Mix in the grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt until well combined.
  3. Gently fold in the flour using a spatula just until incorporated; small lumps are okay.
  4. Pour the batter into the prepared loaf pan and level the top with a spatula. Bake for about 50-60 minutes or until a toothpick comes out clean from the center.
  5. Allow the bread to cool in the pan for about 10 minutes before transferring it to a cooling rack. Slice when completely cooled.
