- 2 and 3/4 cups all-purpose flour
- 1/4 cup + 2 tbsp granulated sugar
- 4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 3/4 cup salted butter, cubed & cold
- 1 cup cold buttermilk
- 1–2 tbsp heavy cream, for brushing tops of biscuits
- Coarse sugar, for sprinkling
- 1 and 1/4 cups cold heavy cream
- 3 tbsp powdered sugar
- 1 tbsp vanilla extract
Instructions
- Prepare the strawberries by tossing them with sugar in a bowl. Refrigerate while making the biscuits.
- Combine flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl. Cut in cold butter until crumbly. Mix in buttermilk until a dough forms.
- Roll out the dough to about 3/4 inch thick, folding it several times for flakiness. Cut out biscuits and chill on a baking sheet.
- Preheat oven to 400°F (200°C). Bake biscuits for 20–24 minutes until golden brown.
- Whip cold heavy cream with powdered sugar and vanilla until stiff peaks form.
- Assemble by slicing cooled biscuits in half and layering with strawberries and whipped cream immediately before serving.
