  • 3/4 cup salted butter, cubed & cold
  • 1 cup cold buttermilk
  • 12 tbsp heavy cream, for brushing tops of biscuits
  • Coarse sugar, for sprinkling
  • 1 and 1/4 cups cold heavy cream
  • 3 tbsp powdered sugar
  • 1 tbsp vanilla extract

Instructions

  1. Prepare the strawberries by tossing them with sugar in a bowl. Refrigerate while making the biscuits.
  2. Combine flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl. Cut in cold butter until crumbly. Mix in buttermilk until a dough forms.
  3. Roll out the dough to about 3/4 inch thick, folding it several times for flakiness. Cut out biscuits and chill on a baking sheet.
  4. Preheat oven to 400°F (200°C). Bake biscuits for 20–24 minutes until golden brown.
  5. Whip cold heavy cream with powdered sugar and vanilla until stiff peaks form.
  6. Assemble by slicing cooled biscuits in half and layering with strawberries and whipped cream immediately before serving.
