Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup cold unsalted butter
  • 1/4 cup warm whole milk
  • 2 tablespoons sugar
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt

Instructions

  1. In a large mixing bowl, combine flour, sugar, salt, and yeast. Gradually add warm milk while mixing to form a shaggy dough.
  2. Knead the dough on a floured surface until smooth.
  3. Flatten the cold butter between parchment sheets into a rectangle and chill.
  4. Roll the dough into a rectangle twice as long as wide; place chilled butter on one half and fold over to encase it.
  5. Roll out again and fold into thirds (laminate). Repeat this process two more times.
  6. Cut triangles from the dough and roll from base to tip to shape croissants.
  7. Place on lined trays to proof until doubled in size (about 1 hour).
  8. Preheat oven to 400°F (200°C) and bake for 15-20 minutes until golden brown.
