Ingredients

Scale
  • 1.5 pounds zucchini (about 680 grams), shredded
  • 1 teaspoon salt
  • 1 cup low-moisture mozzarella cheese (120 grams), shredded
  • 1 large egg, whisked
  • 1 tablespoon olive oil or avocado oil

Instructions

  1. Shred the zucchini and place it in a colander with salt. Let it sit for 10 minutes to draw out moisture.
  2. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  3. Squeeze out excess moisture from the zucchini using a clean towel.
  4. In a bowl, mix the squeezed zucchini with mozzarella cheese and whisked egg until combined.
  5. Scoop about ¼ cup of the mixture onto the baking sheet and shape into flat circles (5 inches in diameter).
  6. Bake for approximately 18 minutes or until golden brown. Allow to cool before serving.
