  • 15 ounces part-skim ricotta cheese
  • 1 large egg
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 10 ounces frozen spinach (thawed and squeezed dry)
  • 3 cups marinara sauce (divided)
  • Garlic, Italian seasoning, salt, pepper, nutmeg

Instructions

  1. Cook the noodles in salted boiling water until al dente; drain and set aside.
  2. Preheat the oven to 350°F (175°C) and spread 1 cup of marinara sauce in a baking dish.
  3. In a mixing bowl, combine ricotta, egg, half the mozzarella, Parmesan, spinach, garlic, Italian seasoning, salt, pepper, and nutmeg.
  4. Spread about 1/3 cup of filling on each noodle and roll up tightly; place seam-side down in the baking dish.
  5. Top rolls with remaining marinara sauce and mozzarella cheese.
  6. Cover with foil and bake for approximately 35 minutes until heated through.
