  • 1 (15-ounce can) Tomato Sauce (or tomato puree)
  • 1/3 cup Tomato Paste (about half of a 6-ounce can)
  • 4 cups Chicken Broth
  • 12 cups Water (to adjust consistency)
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Sea Salt (or more as needed to adjust flavor)
  • Black Pepper (to taste)
  • 8 ounces Bowtie Pasta (uncooked)
  • 1/2 cup Ricotta Cheese
  • 2 ounces Mozzarella Cheese (shredded, about 1/2 cup)
  • 1/4 cup Parmesan Cheese (shaved, shredded, or fresh grated)
  • 1/4 cup Fresh Parsley (chopped)

Instructions

  1. In a Dutch oven over medium heat, add olive oil. Once hot, add diced onion. Sauté until translucent.
  2. Add ground beef to the pot. Cook until browned, breaking it apart with a wooden spoon as it cooks.
  3. Stir in minced garlic and cook for about 30 seconds until fragrant. Then add canned diced tomatoes, tomato sauce, and tomato paste; mix well.
  4. Add chicken broth to the mixture along with water as needed to achieve desired consistency. Stir in Italian seasoning, salt, and pepper.
  5. Bring soup to a boil. Once boiling, add uncooked bowtie pasta. Cook according to package instructions until al dente.
  6. Remove from heat and stir in ricotta cheese until well combined. Top with mozzarella and parmesan cheese.
  7. Ladle into bowls and garnish with fresh parsley before serving warm.
