  • 2 cups cooked grains (brown rice or quinoa)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup kalamata olives (pitted)
  • 1/3 cup dairy-free cheese (crumbled; optional)
  • 1/4 cup fresh herbs (parsley or dill, chopped)
  • 1 cup coconut yogurt (for dairy-free)
  • 1/2 cucumber (grated, squeezed dry)
  • 1 tbsp fresh dill (chopped)
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp fresh lemon juice (for vinaigrette)
  • 1 tsp honey (omit for Whole30)
  • 1/2 tsp dried oregano (for vinaigrette)

Instructions

  1. Mix the marinade ingredients in a bowl: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Coat the sirloin steak in the marinade and refrigerate for 30 minutes to 4 hours.
  2. In another bowl, mix dairy-free yogurt with grated cucumber, lemon juice, minced garlic, fresh dill, salt, and pepper. Cover and chill until ready to serve.
  3. In a small bowl, whisk together olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper until well combined.
  4. Heat a cast iron skillet over medium-high heat. Sear the marinated steak for 4–5 minutes on each side until it reaches desired doneness. Remove from heat and let it rest before slicing thinly against the grain.
  5. In serving bowls, layer your choice of cooked grains as a base. Add sliced steak on top along with cherry tomatoes, diced cucumber, red onion, olives, cheese if using, and fresh herbs. Drizzle with tzatziki sauce and vinaigrette before serving.
