  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter
  • 16 chocolate batons
  • 1 tbsp milk (for brushing)
  • Confectioners' sugar (for dusting)

Instructions

  1. In a large bowl, mix flour, sugar, salt, and instant yeast. In a separate bowl, combine cold milk and add it gradually to the dry mixture until a soft dough forms. Knead gently until smooth.
  2. Roll out the cold butter between parchment paper into a rectangle about 1/2 inch thick. Chill until firm.
  3. Roll out the dough into another rectangle, place the chilled butter in the center, and fold the dough over to encase the butter completely.
  4. Roll out this dough into a long rectangle, then fold it into thirds like a letter. Repeat this process two more times, chilling between folds if necessary.
  5. Roll out into a larger rectangle one last time. Cut triangles from the dough and place one chocolate baton at the base of each triangle before rolling tightly from base to tip.
  6. Place on a lined baking sheet, brush with milk, and bake at 400°F (200°C) for about 20 minutes or until golden brown.
