Instructions
- Preheat oven to 350°F (175°C). Line a muffin pan with liners and lightly spray them.
- In a bowl, mix graham cracker crumbs, 2½ tbsp sugar, and melted butter until combined. Press into muffin liners.
- Beat cream cheese until smooth. Add the egg, sugar, vanilla, pumpkin puree, evaporated milk, brown sugar, cinnamon, nutmeg, and salt; mix until creamy.
- Pour filling into crusts until three-quarters full.
- Bake for about 55 minutes or until set. Allow to cool before serving.
