  • ¼ cup sugar
  • ½ tsp vanilla extract

  • ½ cup evaporated milk
  • ⅛ tsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ tsp salt
  • ⅛ cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin pan with liners and lightly spray them.
  2. In a bowl, mix graham cracker crumbs, 2½ tbsp sugar, and melted butter until combined. Press into muffin liners.
  3. Beat cream cheese until smooth. Add the egg, sugar, vanilla, pumpkin puree, evaporated milk, brown sugar, cinnamon, nutmeg, and salt; mix until creamy.
  4. Pour filling into crusts until three-quarters full.
  5. Bake for about 55 minutes or until set. Allow to cool before serving.
