  • ½ cup (115g) granulated sugar
  • ½ cup (60g) powdered sugar
  • ½ cup (108g) canola or vegetable oil
  • 1¼ teaspoons pure vanilla extract
  • ¼ teaspoon almond extract
  • 1 large egg
  • 2⅓ cups (291g) all-purpose flour (spooned and leveled)
  • ¾ teaspoon baking soda
  • ¾ teaspoon cream of tartar
  • ½ teaspoon salt
  • ¾ cup (173g) granulated sugar, divided (for rolling and sprinkling)

Instructions

  1. Preheat your oven to 350°F. Line three baking sheets with parchment paper.
  2. In a large bowl, using an electric mixer, beat together the softened butter, granulated sugar, and powdered sugar until creamy. Gradually add the oil while continuing to mix until well combined. Scrape down the sides as needed. Add the egg along with both extracts and mix until combined.
  3. In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt until evenly mixed. Gradually add this dry mixture into the wet ingredients and beat until just combined.
  4. Set aside ¼ cup of granulated sugar for topping after baking. Place another ½ cup of sugar into a wide container suitable for tossing dough balls.
  5. Scoop out the dough using a tablespoon or cookie scoop, form each portion into a ball about two teaspoons in size, and drop several into the sugar container at once to coat.
  6. Place dough balls on prepared baking sheets, spaced a couple of inches apart—about 30 per sheet. Use a cookie stamp or the bottom of a glass to gently flatten each ball.
  7. Bake in your preheated oven for about 9–12 minutes, until puffed up and beginning to set around the edges. Remove from the oven and sprinkle tops with reserved sugar immediately after taking them out. Allow cookies to cool completely on wire racks before storing them.
