Ingredients
- 2 pounds lean ground beef
- 1 cup milk
- 2 large eggs
- 1 cup panko breadcrumbs
- 4 packets (2 each) au jus gravy mix and ranch seasoning mix
- 6 peperoncini peppers (optional)
- ¼ cup peperoncini juice (optional)
Instructions
- Line the crock pot with foil and spray with nonstick cooking spray.
- In a large bowl, whisk milk, eggs, sugar, one packet each of au jus and ranch seasoning, and panko until combined.
- Add ground beef; mix gently until just combined.
- Shape the mixture into an oval; place in the lined crock pot.
- In another bowl, whisk cold water, remaining au jus and ranch seasoning, and peperoncini juice; pour over meatloaf.
- Top with peperoncini peppers if desired.
- Cook on low for 5-6 hours or high for 3-4 hours until internal temperature reaches 165°F.
- Remove carefully using foil edges; strain remaining gravy and thicken if desired before serving.
