  • 2 pounds lean ground beef
  • 1 cup milk
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 4 packets (2 each) au jus gravy mix and ranch seasoning mix
  • 6 peperoncini peppers (optional)
  • ¼ cup peperoncini juice (optional)

Instructions

  1. Line the crock pot with foil and spray with nonstick cooking spray.
  2. In a large bowl, whisk milk, eggs, sugar, one packet each of au jus and ranch seasoning, and panko until combined.
  3. Add ground beef; mix gently until just combined.
  4. Shape the mixture into an oval; place in the lined crock pot.
  5. In another bowl, whisk cold water, remaining au jus and ranch seasoning, and peperoncini juice; pour over meatloaf.
  6. Top with peperoncini peppers if desired.
  7. Cook on low for 5-6 hours or high for 3-4 hours until internal temperature reaches 165°F.
  8. Remove carefully using foil edges; strain remaining gravy and thicken if desired before serving.
