Instructions
- Preheat your oven to 350°F and line a 9×5 loaf pan with parchment paper.
- In a large mixing bowl, combine zucchini, eggs, vegetable oil, Greek yogurt, and vanilla. Mix well.
- In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually combine the dry ingredients into the wet mixture until just incorporated.
- To create the swirl, mix granulated sugar with cinnamon in a small bowl.
- Pour half of the batter into the pan; sprinkle half of the cinnamon mixture on top. Add remaining batter and sprinkle with leftover cinnamon sugar. Gently swirl through the batter with a knife.
- Bake for 60–65 minutes or until a toothpick inserted comes out clean.
- Let cool for 10–15 minutes before slicing.
