  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon (for the batter)
  • 1/2 cup granulated sugar (for the cinnamon swirl)
  • 1 tablespoon cinnamon (for the cinnamon swirl)

Instructions

  1. Preheat your oven to 350°F and line a 9×5 loaf pan with parchment paper.
  2. In a large mixing bowl, combine zucchini, eggs, vegetable oil, Greek yogurt, and vanilla. Mix well.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually combine the dry ingredients into the wet mixture until just incorporated.
  5. To create the swirl, mix granulated sugar with cinnamon in a small bowl.
  6. Pour half of the batter into the pan; sprinkle half of the cinnamon mixture on top. Add remaining batter and sprinkle with leftover cinnamon sugar. Gently swirl through the batter with a knife.
  7. Bake for 60–65 minutes or until a toothpick inserted comes out clean.
  8. Let cool for 10–15 minutes before slicing.
