- 4 cups Granny Smith apples (peeled and cubed)
- 1/2 cup old-fashioned oats
- 1 cup all-purpose flour
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- 2 large eggs
- 1/4 cup apple juice or water
- 3/4 cup chopped pecans (divided)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, toss cubed apples with lemon juice and set aside.
- In another bowl, mix oats, flour, baking soda, and cinnamon until combined.
- Cream softened butter and sugar in a large bowl; gradually add vanilla extract, salt, and eggs. Mix well after each addition.
- Fold the dry mixture into the wet mixture along with apple juice until just combined. Stir in prepared apples and half of the pecans.
- Pour batter into a greased 9"x13" baking pan and sprinkle remaining pecans on top. Bake for about 25-30 minutes or until golden brown.
- Cool slightly before glazing with a mixture of powdered sugar and milk.
