  • 4 large onions
  • 1 cup rice
  • 1 pound ground chicken (or turkey)
  • 1 medium onion, finely chopped
  • 1/2 cup fresh herbs (parsley, dill, mint), chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 3 cups vegetable broth

Instructions

  1. Peel the onions and carefully slice off the tops. Scoop out some inner layers to create space for stuffing.
  2. Cook the rice in boiling water for about 5-7 minutes until partially done. Drain and set aside.
  3. In a mixing bowl, combine ground chicken (or turkey), chopped onion, herbs, partially cooked rice, tomato paste, turmeric, salt, and pepper. Mix well.
  4. Stuff each hollow onion with the filling mixture, leaving some space at the top.
  5. Arrange stuffed onions upright in a baking dish.
  6. Pour vegetable broth around the stuffed onions to keep them moist.
  7. Cover with foil and bake in a preheated oven at 350°F (175°C) for about 45 minutes until onions are tender.
