Description

Ingredients

  • 1 pound roma tomatoes
  • 1 large yellow onion
  • 2 medium jalapeño peppers
  • 1/2 medium bunch fresh cilantro
  • 3 medium limes
  • 1 teaspoon kosher salt

Instructions

  1. Dice the tomatoes and place them in a medium bowl.
  2. Chop the yellow onion and add it to the bowl.
  3. Remove seeds from jalapeños, dice them finely, and mix into the bowl.
  4. Coarsely chop the cilantro and add it to the mixture.
  5. Juice the limes into the bowl (strain out pith).
  6. Season with kosher salt and stir until combined.
  7. Refrigerate for about 20 minutes before serving.
